American Style Citrus Pancakes

Citrus Pancakes

Although pancake day has passed I thought it would be a nice idea to share with you a new pancake recipe I used recently! The original recipe was from a Waitrose cook book, however due to a lack of ingredients I tweaked the recipe slightly and was pleasantly surprised with how the pancakes turned out.


300ml Buttermilk
2 tbsp Semi-skimmed Milk
2 Large Eggs - Separated
1 tsp Vanilla Extract
1 Lemon - Zest and Juice
2 tbsp Clear Honey
200g Plain Flour
2 tsp Baking Powder
20g Butter (I used Stork spread)
1/2 tin of Grapefruit
2 Small Oranges


  1. Mix together the buttermilk, milk, egg yolks, vanilla extract, lemon zest and juice, 1 tbsp honey, melted butter and a pinch of salt.
  2. In a separate bowl sift the flour and baking powder together and create a well in the middle. Next, add the liquid mixture and beat together.
  3. After this it's time to prepare the topping. For this you want to slice the grapefruit and oranges into about 2cm chunks. Add the chopped fruit and a tbsp honey together, this is your topping.
  4. Just before you cook your pancakes stir in whisked egg whites to the mixture. 
  5. Grease a frying pan and, dependant on how large you want your pancakes to be, add scoops of the mixture to the pan. The pancakes should take around two minutes to cook.
  6. Once your pancakes are cooked place them on a plate with the citrus salad you have created and a drizzle of honey (or alternatively date syrup.)
